It’s a Great Time to Eat Grass Fed Bison

Empire Buffalo is a small scale bison farm. We sell bison meat by the retail cut. Bison is great tasting and good for you, and ours is all grass fed, which creates a more sustainable footprint.

Empire Buffalo will be at the Cazenovia Farmers Market every Saturday through the end of October. We will also be at the Fayetteville Farmers Market on Thursdays. We are always masked when at the market.

If you prefer, we’re also happy to have you purchase and pick up at the farm. Just send us an email, or call for an appointment. We’ll take your order, let you know what it costs and bring it to your car, with our mask and gloves on for a no contact purchase.

Our Story

Joe Lazarsky and Aileen Randolph purchased 100 acres on Falls Road late in 2009. It was an old dairy farm that hadn’t been farmed in a decade. In 2011 we brought in a small herd of bison from Tennessee. Our herd has grown to over 60 and we’ve learned alot about bison, fencing and the challenges of small scale farming. We wouldn’t be here today without the support of our community and passionate bison eaters from across the region. We truly appreciate it.

  • Back from the processor!
    Happy to report that the freezers are full and all cuts are available. Joe made the round trip to the butcher yesterday. Our meat is processed with a New York State regulated butcher outside of Binghamton.
